Colourful Canapes

Ingredients

For the Cream cheese spread

  • 4 large Garlic pods
  • 3 tbsps. Dill leaves
  • ½ cup Cream cheese
  • ½ tsp Salt
  • ¼ tsp Black pepper, crushed
  • 1 tbsp. Lemon juice

For the Assorted Vegetable Toppings

For the Pickled Cucumber topping

 

  • 1 large Cucumber, sliced thinly
  • ½ tsp Salt
  • 1 tbsp. Apple cider vinegar
  • 1 tsp Caster sugar

For the Herby Tomato topping

  • 3 medium Tomatoes
  • ⅓ cup Water
  • ½ tbsp. Parsley, chopped
  • 2 tbsps. Extra virgin olive oil
  • ¼ tsp Salt
  • ¼ tsp Black pepper

For the Caramelized Onion topping

  • 1 cup Onion, thinly sliced
  • 1 tbsp. Olive oil
  • 1 tbsp. Sugar
  • 1 tsp Balsamic vinegar

For the Canapes

  • 12 slices Brown bread
  • 2 tbsps. Olive oil
  • Cream cheese spread
  • Pickled cucumber topping
  • Herby tomato topping
  • Caramelized onion topping
  • 2 tbsps. Basil leaves, finely chopped
  • 2 tbsps. Parsley, finely chopped
  • 2 tbsps. Chives, finely chopped

Method

For the Cream cheese spread

  • Transfer the garlic pods and dill leaves to the chutney jar of the Morphy Richards Food Processor. Close and process it for 4-5 seconds or until the ingredients get evenly chopped.
  • Open, add the cream cheese, salt, black pepper and lemon juice.
  • Close and process again for 5-10 seconds or until well blended.
  • When done, transfer to a bowl and keep aside until required.

For the Assorted Vegetable Toppings

  • For Pickled Cucumber Topping. Place cucumber and salt in a bowl and leave it aside for 5 minutes or until its water is let out. Squeeze and discard the water.
  • Add in the vinegar and sugar. Place the bowl in Morphy Richards Microwave Oven and cook it at P100 for 1 minute

For Herby Tomato:

  • Cut crosses into the bottom of the tomatoes and place in a microwave safe bowl. Add the water, cover bowl with lid and place in microwave oven. Cook at P100 for 2 minutes or till skins have loosened and split.
  • When done, place the tomatoes under running water until the tomatoes are cooled. Remove the skin, discard seeds and dice.
  • Put in a bowl, add basil, parsley, chives, extra virgin olive oil, salt and black pepper. Mix well and keep aside.

For the Caramelized Onions:

  • Mix together the onion, olive oil, sugar and balsamic vinegar in a microwave safe bowl and place in the Microwave oven.
  • Cook at P100 for 4-5 minutes or until the onions are softened and have turned darker. Keep aside to cool

For the Canapes 

  • Place each slice of bread on a cutting board and cut it with your choice of cookie cutter. Make sure to keep the sizes same. Drizzle on both sides with the olive oil.
  • Arrange on a baking tray.Preheat the Morphy Richards oven at 180° Celsius on Toast setting. Once hot, toast the bread for 3 minutes each on either side.
  • When done, transfer to a wire rack and keep aside to cool.When ready to serve, spread the cream cheese over each toasted bread and arrange on a serving platter.
  • Arrange the pickled cucumber topping on 4 slices of toast and top with parsley.
  • Arrange herby tomato topping on 4 toasts and top with basil. Arrange caramelized onion topping on remaining 4 toasts and top with chives.
  • Serve immediately.
