One of the finest and authentic Kashmiri cuisines, Mutton Rogan Josh is a light gravy with a myriad of spices that will make your mouth watery. Having a Persian origin, the name is derived from the Persian words in which Rogan means oil and Josh mean intense heat. A delicious and perfect dish to serve at festive occasions and family gatherings!

Ingredients

Ingredients:

 

  • Mutton (with bones), cut into medium pieces – 500 gms
  • Curd/Yogurt – 1 cup
  • Salt – As per requirement 
  • Mustard oil – 4-5 tbsp 

 

Spices Required:

 

  • Black Cardamom – 2 
  • Green Cardamom – 4 
  • Cloves – 4 
  • Cinnamon Stick – 1 
  • Bay leaves – 2 
  • Black Pepper Powder – ½ tsp
  • Fennel Powder—1 tsp 
  • Asafoetida – ½ tsp
  • Kashmiri Red Chilli Powder – 2 tsp
  • Ratan jot – ½ inch 

 

For Marination:

 

  • Fennel Seeds – ½ tsp
  • Cinnamon Powder – ¼ tsp
  •  Kashmiri Red Chilli Powder – 1 tsp
  • Black Pepper Powder – ½ tsp
  • Cardamom Powder – ½ tsp 

Method

Step 1: Wash the meat properly under running water for a minute and drain the water completely.

 

Step 2: Take a bowl and marinate the mutton pieces (with above-mentioned ingredients) for approximately 2 hours. Cling wrap the bowl and refrigerate it.

 

Step 3: Take a heavy-bottomed wok and heat oil. Add bay leaves and other mentioned whole spices.

 

Step 4: Once it releases the aroma, add the marinated mutton and mix properly. Fry the pieces on medium to high flame, stirring occasionally.

 

Step 5: Add asafoetida and stir well. Add 1 cup of water and allow it to cook with lid closed on a low flame for about 20 mins.

 

Step 6: Take a separate bowl and add yogurt, red chilli powder and fennel powder and whisk nicely. For a nice whisking experience, you can buy Morphy Richards Pronto Super Hand Blender or visit our official online store for more options.

 

Step 7: Take off the lid and add whisked yogurt into the mutton mixture and mix well properly. Adjust salt as needed.

 

Step 8: Add Ratan Jot in the mutton and cook till it becomes soft and tender.

 

Step 9: Pour it in serving bowls and garnish with fresh coriander. Serve hot with steamed rice or rumali rotis for a scrumptious meal.

Notes/Tips:

Traditionally, Rogan Josh has a thin watery gravy. But if you want to thicken the gravy, add 2 tbsp all-purpose flour in the yogurt and whisk it well before adding in the gravy.
