Layered Vegetable Pie
Kick-off this festive season with this magnificent, colourful pie, which is a marvellous showcase of fresh and seasonal produce.

Ingredients
- Eggplant, sliced – 500 gms
- Zucchini, sliced – 1 cup
- Red peppers, chopped – 1 cup
- Potatoes, parboiled and sliced – 1 cup
- Tomatoes, chopped – 1 cup
- Onion, finely chopped - 2
- Garlic cloves, chopped - 2
- Oregano – 1 tbsp
- Fresh thyme, chopped – 3 tbsp
- Breadcrumbs – 2 cups
- Mozzarella cheese – 1 cup
- Cream cheese – 200 gms
- Butter – 2-3 tbsp
- Salt and pepper – As per taste
- Olive oil – As per taste
Method
Step 1: Preheat microwave oven to 350oC. You can use Morphy Richards MWO 23 MCG (23 Litre) Microwave Oven for a good baking experience.
Step 2: Slice the eggplant and place it in a colander. Sprinkle with salt and allow it to rest for 30 min. Rinse and pat dry.
Step 3: Chop all the vegetables - zucchini, eggplant, peppers and potatoes and keep it aside. You can use FP Icon Dlx 1000W for a hassle-free cutting experience.
Step 4: Heat the oil and fry all the vegetables consecutively, keeping it separate.
Step 5: Take a pan and soften the onion and garlic in the olive oil with oregano and thyme. Add the tomatoes, cream cheese and simmer to a rich sauce.
Step 6: Coat the casserole tray with butter properly and layer the vegetables. Begin with two layers of eggplant at the bottom and pour the sauce over the vegetable.
Step 7: Then add a layer of potato, onion and seasoning, following with a layer of zucchini, onion and seasoning.
Step 8: Then add the capsicum, onion and seasoning.
Step 9: Spread the remaining sauce and sprinkle cheese over the vegetables evenly.
Step 10: In a bowl, mix breadcrumbs with olive oil and remaining fresh thyme. Spread the breadcrumb mixture over the vegetables to make a crust.
Step 11: Cover it with a foil and bake for 45-50 minutes.
Step 12: Remove the foil and bake for another 15 minutes to brown the crust.
Your vegetable layered pie is now ready to serve!
Notes/Tips:
Instead of the above-mentioned vegetables, you may add your preferred ones such as pumpkin, broccoli, etc.Share:
