Cheesy Microwave Vegetable Casserole

Ingredients

  • ½ tsp Oil
  • 1 tbsp Chilli flakes
  • 1 tbsp Garlic, finely chopped
  • 1 tbsp dried Oregano
  • 2 cups Sweet corn
  • 1 cup Carrots, diced
  • 1 cup Peas
  • 1 cup Cauliflower florets, chopped small
  • ¼ tsp Salt
  • ¼ tsp Black pepper, freshly crushed
  • 1 cups Stock or water
  • ¼ cup Milk
  • 1 tsp Flour
  • 1 cup Cheese, grated

Method

  • Put the oil in a large, microwave safe bowl.
  • Add the chili flakes, garlic and dried oregano.
  • Cover with lid and cook in the Morphy Richards Microwave Oven on P100 for 40 seconds.
  • Remove and stir once quickly.
  • Add the corn, carrots, peas, cauliflower, salt, black pepper and water. Mix well.
  • Cook in the microwave oven on P100 for 11 minutes. Remove and check if the vegetables are cooked.
  • Combine the milk, flour and grated cheese.
  • Cook in the microwave oven in 30-second bursts at P100, stirring in between to melt the cheese.
  • Continue cooking in 30-second intervals, stirring between each interval, until the cheese has melted and forms a creamy sauce. This should take 1 minute total.
  • When done, remove and stir it well.
  • Taste and adjust seasoning as required.
  • Serve hot with crusty bread.
