Kakori Kebab
Deriving its name from the city of Kakori on the outskirts of Lucknow, this mouth-watering indulgent kebab acts as a great snack or an appetizer on any gathering or events. These extra-tender and succulent kebabs are made with minced lamb or mutton, marinated with raw papaya and a range of aromatic Indian flavours.

Ingredients
- Mutton, minced – 500 gm
- Ginger- garlic paste – 1 tsp
- Salt – 2 tsp
- Black pepper powder – ¼ tsp
- Green coriander, chopped – 2 tsp
- Green chillies, chopped – 3
- Raw papaya, chopped – 2 tbsp
- Cloves – 4
- Black cardamom seeds – 2
- Cinnamon powder – 1/8 tsp
- Cumin seeds – 1 tsp
- Black mace – 1
- Nutmeg, grated – ¼ tsp
- Onions, sliced – 2 cups
- Bhuna chana (Roasted Chickpeas), powdered – ¼ cup
- Egg -- 1
- Ghee (for brushing) – 2-3 tbsp
- Onion rings (for garnishing) – As per requirement
- Lemon wedges (for garnishing) – As per requirement
- Chaat masala (for garnishing) – As per requirement
Method
Step 1: Take minced mutton in a bowl and wash it thoroughly under running water for a minute. For smooth minced mutton, add medium-sized chunks of boneless mutton pieces in a Food Processor. You can buy Morphy Richards Icon Dlx Food Processor or visit our official online store for more options.
Step 2:Mix all the ingredients except ghee and garnishing items in a large bowl and marinate for about 4-5 hours.
Step 3:Combine all the ingredients properly and grind it into a smooth, thick paste. Step 4:Knead this mixture well. Combine the mixture in the roasted chickpeas and the egg. Cover it and refrigerate for 1-2 hours.
Step 5:Shape the mutton mixture around the skewers and place the kebabs onto a grill over a drip tray, or in a pre-heated OTG (also on a drip tray) at 220-degree C. Step 6:Brush the kebabs with ghee and let it cook for another 2 minutes.
Step 7:Sprinkle chaat masala and garnish with onion rings and lemon wedges. Serve with green chutney.
Notes/Tips:
If you are cooking kebabs over a charcoal grill, keep rotating them so that they are properly brown and cook evenly. Also, do not overcook the kebabs else it will become chewy.Share:
