Method

Step 1: Rinse boneless chicken pieces under cold running water, then pat them dry with paper towels.

Step 2: Using a kitchen knife, remove the skin, tendons and fat from the pieces.

Step 3: Chop the chicken into small uniform pieces.

Step 4: Put a few handfuls of the chicken chunks into a food processor and pulse the chicken into a coarse mixture. You can use Morphy Richards Icon Superb Food Processor for a hassle-free mincing experience.

Step 5: Repeat the same process with the remaining chicken. It is advisable to work in small batches to ensure an even mince.

To make Chicken Tikki:

Step 6: Take a bowl, whisk eggs and keep aside.

Step 7: Take a big bowl and add minced chicken and add all the spices (mentioned under ingredients) and mix properly.

Step 8: Add ginger garlic paste, chopped onions, chopped coriander leaves, rice flour, breadcrumbs and salt to taste. Mix well.

Step 9: Divide the mixture into equal portions and shape it into round balls.

Step 10: Dip each ball into the egg mixture and dust them in the breadcrumbs, pressing a little while dusting to give it a tikki or patty shape.

Step 11: Take a non-stick pan and add butter. Fry tikkis on a medium flame till it becomes crisp on both the sides for 4-5 minutes.

Step 12: Remove it on a plate and serve hot with either Dhaniya Pudina Chutney or Tomato Chutney.

Notes/Tips:

If you find the mixture is too sticky to make tikkis, add in more breadcrumbs to maintain consistency.
