Steamed Sweet Red Bean Buns

Made up of sweet bread stuffed with a sweet red bean paste filling, these pillow-soft steamed buns are a delicious snack that will pair perfectly with a Matcha Latte or Black Coffee. With no egg or butter, this classic recipe is extremely easy to make at home.

Ingredients
Red bean paste:
- Red beans (Rajma) – 1 cup
- Water – 3 cups
- Granulated sugar – ¾ cup
- Vanilla extract – 2 tsp
- All-purpose flour – 4 cups
- Lukewarm water – 2 cups
- Granulated sugar – 1 tsp
- Instant yeast – 1 tbsp
Method
Step 1: Take a bowl and wash the red beans twice under running water for a minute. Soak the beans overnight or at least for 10 hours.
Step 2:Drain the water completely and transfer the soaked beans into a heavy pot.
Step 3: Cook for 1 hour over medium heat until the beans become soft and tender. Keep it aside and allow it to cool for some time.

Step 5:Turn up the heat again to medium-high and cook for a few minutes until the bean mixture turns thick and juicy. It is advisable to stir constantly, so that the beans do not stick to the bottom of the vessel. Remove from the heat. Cover and set the mixture aside.
Step 6:For the dough, take a bowl and combine all the ingredients (mentioned above). Knead for 10 minutes or until a firm, slightly elastic dough form. Please note the dough shouldn’t be sticky. Add flour if needed.
Step 7:Cover the bowl with a damp cloth for an hour and allow it to rise.
Step 8:Divide the dough into equal portions and shape into balls. To wrap the buns, flatten the dough into a circular disc. It is advisable to keep the edges thinner than the centre for a better taste.
Step 9:Place one spoonful of red bean paste in the centre. Ensure the filling is evenly spread, bring them together and press to seal while pushing the filling down with your finger. Seal the edges all around.
Step 10:Keep all the buns ready under a damp kitchen towel for 10-20 minutes.
Step 11:Boil water in a steamer and line the steamer with parchment paper. Place buns and steam for 12-15 minutes. Maintain at least a distance of 1 cm of space between each bun. Tip: You can freeze these sweet buns for up to one month. Whenever you feel like eating, steam or reheat it in a microwave.
