Microwave Mixed Fruit Compote

Ingredients

  • 1 cup Fruit, chopped (pick from apples, pears, oranges, grapes, berries or a mix)
  • ½ cup Sugar
  • Pinch of salt
  • 1 tbsp. Lemon juice

Method

  • Combine the fruit, sugar and lemon juice in a large microwave-safe bowl, lightly mashing to release their juices. Leave to macerate for 30 minutes, or until the sugar has dissolved and the fruit looks syrupy.
  • Cover and place bowl Morphy Richards microwave. Cook at P80 for 4 minutes, stirring halfway.
  • When done uncover and microwave at P80 for 1 minute. The preserve will bubble up to four times in volume as it cooks, do not worry.
  • When done, carefully remove the bowl using mitts (it will be very hot) and mix well. It will be loose and syrupy. Mash fruit against the sides of the bowl if you'd like a smoother texture, and microwave for 1 more minute or leave it as is for a chunkier texture.
  • When done transfer the compote to an airtight storage container.
  • Cool, cover and store in the refrigerator till required.
