Baked Coconut Gujiya
Made in several parts of India, Gujiya is a popular dessert made during Indian festivities. Known by several other names such as Dessert Empanadas, Milk-Fudge Hand-Pies, or Turnovers, they are made by filling pastry sheet with a sweetened khoya and dry fruits stuffing, then deep fried. Ingredients
For the dough:
- All-purpose flour - 2 cups
- Ghee/butter - 3 tbsp
- Salt – As per taste
For the filling:
- Shredded coconut - 2 cups
- Sugar – As per taste
- Cardamom powder – ½ tsp
- Nutmeg powder – ¼ tsp
- Cinnamon powder – ¼ tsp
- Assorted nuts (raisin, cashew nut, walnut, almonds and pistachios) – 1 cup
- Milk -- 3-4 tbsp
Method
To prepare the dough:
Step 1: Take a bowl and add flour, salt and butter or ghee. With the help of fingers, mix them well so that it resembles breadcrumbs
.
Step 2: Add enough cold water to knead them softly and tightly. Remember the dough must be soft and tight.
Step 3: Once done, wrap the dough in a plastic sheet and allow it to rest for 30 minutes in a refrigerator.
To prepare the filling:
Step 4: Take a large pan and dry roast the shredded coconut for a few minutes. Do not overcook the coconuts.
Step 5: Add sugar to the coconut mixture and mix well on low heat.
Step 6: Gradually add the spices and the nut mixture and mix them well. Stir for 3-4 minutes until the mixture becomes dry and slightly moist.
To prepare the Gujiyas:
Step 7: Take out the dough from the refrigerator and knead it again for a few minutes and divide it into small equal balls.
Step 8: Roll out the dough on a floured surface and stamp out some 20 small discs out of it.
Step 9: Put 1 tsp of the coconut filling in the centre and brush the edges of the circle with milk, fold them and sealed the edges. Press the edges with the help of a fork.
Step 10: To get a light brown lustre, brush the top of the Gujiyas with milk.
Step 11: Arrange the Gujiyas on a cookie sheet lined with a parchment paper.

Notes/Tips:
Don’t overstuff the Gujiya circles since it will be hard to seal the edges and the mixture might ooze outShare:
