Baked Corn Cake
One of the healthiest foods, Corn is easily available during the monsoon and is loved by almost everyone. Corn is very rich in minerals, fibres and vitamins and is a great source of energy. Moist, sweet and flavourful, Sweet Corn Cake goes great with a cup of coffee.

Ingredients
- All-purpose flour – 2 cups
- Sugar – ¾ cup
- Salt – As per requirement
- Butter, melted – ¼ cup
- Corn kernel – 1 cup
- Baking powder – ¾ tsp
- Baking soda – ½ tsp
- Milk – ½ cup
- Egg – 1
Method
Step 1: Preheat the microwave oven for 5 mins at 180o C. You can use Morphy Richards MWO 20 MS for a good baking experience or visit our online store for more options.
Step 2: Shave the corn off the cobs. If you don’t have fresh corn, you can use canned or frozen corn. Blend the kernels with the milk until smooth. You can use Morphy Richards HBCP Hand Blender for smooth blending experience.
Step 3: Sieve together flour, baking powder, baking soda and salt in a mixing bowl.
Step 4: Now, add the blended corn to the flour mixture and stir properly.

Step 6: Add both the mixtures and stir until combined properly.
Step 7: Take a greased pan and pour the mixture and bake for 30-35 minutes or until a skewer inserted comes out clean.
Step 8: Remove from the oven and allow it to cool for 15 minutes before transferring onto the rack to cool.

Notes/Tips:
