Christmas Cake in a Mug

Ingredients
- 1 tbsp Butter + little for greasing, at room temperature
- 3 tbsp Brandy or orange juice
- 7 tbsp / 110gms / 3/4th cup Dried fruit, soaked in rum (mix of raisins, chopped dried fruit peel, dried fig, dates and cranberries)
- 3 tbsp Demerara sugar
- 1 Egg
- ½ tsp Garam masala
- ½ tsp Cinnamon powder
- 1 tsp Vanilla extract
- 3 tsp Self-raising flour
- Pinch of salt
- 1 tbsp Glacé cherries, halved
- 2 tbsp Almonds, roughly chopped
Method
- Grease a 350ml mug with a little butter.
- Add the butter, brandy/ orange juice and dried fruit to the mug and place it in Morphy Richards Microwave Oven on High (Power 100) for 30 seconds until butter is melted.
- Add the sugar and mix well with a fork.
- Add the egg, garam masala, cinnamon powder and vanilla extract.
- Beat again until well combined.
- Add the flour, salt, glace cherries and almonds and fold through gently.
- Cook in the Morphy Richards Microwave Oven for 2 minutes and 40 seconds at High (Power 100)
- When done, leave to cool until the cake leaves the edges of the mug.
- You can now top with ice cream and dig in or turn out onto a plate and top with ice -cream.
